Slaw for Tacos

 

I made this slaw for my Fish Tacos recipe. You can use it as an accompaniment for other dishes as well, or just eat it as a side dish. The addition of the jalapeño gives it a nice kick of heat.

You can use red or white cabbage – I used both for this recipe.

NOTE: Be sure to wear gloves when you work with the jalapeño. If you don’t, wash your hands right after and keep them away from your eyes for the rest of the day.

Ingredients
  • 1/2 head organic cabbage (I used red and white)
  • 1/4 red onion- thin sliced
  • 1 carrot shredded
  • 1 jalapeno pepper (seeded and thinly sliced)
  • 1/2 cup chopped fresh cilantro
  • 1+ lime juiced (adjust amount to taste)
  • a bit of olive oil
  • salt and papper to taste
Instructions
  1. Thinly slice the cabbage and red onion. Shred the carrot. Place in a large bowl.
  2. Place the jalapeño on a cutting board and slice the stem off, then slice in half lengthwise. Remove the seeds by scraping off with a knife and discard them. Thinly slice the jalapeño and toss into the bowl.
  3. Add the rest of the ingredients and mix it up. Adjust the amount of lime juice, salt, and pepper to your desired taste.
